Coconut Quinoa Breakfast Bowl

Serves: 2



  1. Rinse the quinoa under cold water until the water runs clear.
  2. In a medium saucepan, combine the quinoa and coconut milk. Bring the mixture to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the quinoa absorbs most of the coconut milk.
  4. Stir in the honey until well incorporated.
  5. Serve the quinoa in bowls topped with fresh blueberries, chopped walnuts, and coconut chips.
  6. Sprinkle with black chia seeds and drizzle with extra honey if desired.
