Quinoa Stuffed Bell Peppers

Ingredients:

Method:

  • Cook quinoa in vegetable broth as per package instructions.
  • In a pan, sauté onions and garlic in coconut oil until translucent.
  • Add cooked quinoa, black beans, corn, salt, and pepper. Mix well.
  • Fill each bell pepper with the quinoa mixture. Bake at 190°C (375°F) for 25-30 minutes.
