Superfood Buddha Bowl

  • 1 cup Earth’s Finest Organic Tricolor Quinoa
  • 2 cups water
  • 2 cups kale, chopped
  • 1 cup broccoli florets
  • 1 chicken fillet, grilled and sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup carrots, shredded
  • 1/4 cup chickpeas, cooked
  • 1/4 cup pumpkin, roasted and cubed
  • 1/4 cup avocado, sliced
  • 1/4 cup red cabbage, shredded
  • 1/4 cup watermelon radish, thinly sliced
  • 1/4 cup mixed nuts




  1.  Cook the quinoa according to the package instructions.
  2.  In a large bowl, combine the cooked quinoa, kale, broccoli florets, cherry tomatoes, cucumber, red onion, carrots, chickpeas, pumpkin, avocado, red cabbage, watermelon radish, mixed nuts and walnuts, and sliced grilled chicken fillet.
  3.  In a small bowl, whisk together the dressing ingredients until well combined. Adjust the seasonings to your liking.
  4.  Drizzle the dressing over the Buddha Bowl and toss gently to coat all the ingredients evenly.
  5.  Serve immediately and enjoy the wholesome goodness of this Ultimate Superfood Buddha Bowl!
