Coconut Cream and Honey Panna Cotta

For the Panna Cotta:

 

For the Chia Berry Compote:

Method:

Step 1 – Panna Cotta:

  1. Sprinkle the gelatin over the water in a small bowl. Let it stand for about 5 minutes to soften.
  2. In a saucepan, combine the Organic Coconut Cream and Organic Acacia Honey. Heat over medium heat until it begins to steam (do not let it boil).
  3. Add the softened gelatin to the saucepan and stir until the gelatin is completely dissolved.
  4. Pour the mixture into 4 serving glasses or ramekins. Let cool to room temperature, then cover with plastic wrap and refrigerate for at least 4 hours, or until set.

 

Step 2 – Chia Raspberry Compote:

  1. In a small saucepan, combine raspberries, blueberries and our Organic Forest Honey. Cook over medium heat until the berries begin to break down and the mixture starts to simmer.
  2. Remove from heat and stir in our Organic Black Chia Seeds.
  3. Let the compote cool to room temperature, then refrigerate until ready to use.

 

Step 3 – Serving:

  1. Once the panna cotta has set, top each serving with a generous spoonful of the Chia Berry Compote. Garnish with a few fresh berries and a drizzle of honey if desired.
